Like everybody in Manchester who isn't in a band - admittedly, that leaves little more than the cast of "Coronation Street" - Tom and Ed wanted to be DJs. They adopted the name of The Dust Brothers, in tribute to the production crew behind Beastie Boys' "Paul's Boutique" (an early Dilettante favourite). Either it never occurred to them the original Dust Brothers might be protective of the title, or they assumed that they would never do anything so notable as to come to the Americans' attention.
